Basil Shrimp
Adapted from a recipe by Gail Laulette on All recipes.com

 

3 lb. Medium shrimp, peeled and de-veined

3 Tbs. course grained prepared mustard (Gulden's is the one I use)

3 cloves garlic, minced

4 oz fresh basil, stems removed and chopped

2 ½ Tbs. olive oil

½ teaspoon salt or to taste

¼ cup butter, melted

2 lemons, juiced

pinch ground white pepper

In a shallow non-porous dish or bowl add olive oil to melted butter. Then add lemon juice, mustard, basil, garlic, and salt and pepper to taste. Mix all together. Add shrimp and toss to coat. Cover and refrigerate for 1 hour.

Preheat grill to high heat.

Lightly oil grill grate.

Remove shrimp from marinade and thread on skewers.

Place skewers on heated grill and cook about 2 minutes on each side.

Makes 4 servings
