CHILI con CARNE
 Adapted from: Better Homes and Garden New Cookbook.

 

1 pound ground beef

1 medium onion, chopped

1 clove garlic, minced

1 small green pepper, chopped

1 16-ounce can tomatoes, cut up

1 16-ounce can dark red kidney beans, drained

1 8-ounce can tomato sauce

1½ level teaspoons chili powder

½ teaspoon dried basil, crushed

1 teaspoon salt

¼ teaspoon pepper

In a Dutch oven cook beef, onion, green pepper, and garlic till meat is browned. Drain off fat.

Stir in undrained tomatoes, kidney beans, tomato sauce, chili powder, basil, salt, and pepper.

Bring to boiling; reduce heat. Cover and simmer about 20 minutes.

Makes 4 to 6 servings.


Serving Ideas: Serve with Beer.

Comments: Gets better after sitting in the fridge a couple of days. Consider making a double batch.
