GERMAN SPAETZLE NOODLES
Received with Spaetzle Form

 

13 oz flour

2 eggs

½ pint water

1 tablespoon oil

pinch of salt

Mix the flour, eggs and salt to form a dough; add the water until the dough is smooth and not too thick (depending on the size of the eggs, possibly less than ½ pint).

Knead the dough (e.g., with the dough hook of a mixer) until air bubbles appear.

Heat a large pan of salted water and add 1 tablespoon oil; fill the Spaetzle Form with some of the dough and press the dough through into the boiling water.

When the noodles float to the surface, remove with a perforated vegetable spoon and keep in a warm place.

Repeat this process until all the dough has been cooked.

Makes 4 servings.
