HARMONY COLE SLAW
(Named because it's the first one we've found that we both like)
 

 

1 head green cabbage finely sliced

1/4 small green pepper finely sliced

1/2 small onion finely diced

Dressing:

1 cup distilled white vinegar

1 cup sugar

3/4 cup vegetable oil

1 Tbs salt

1 tsp dry mustard


In a nonreactive small bowl, combine the vinegar and sugar and stir until the sugar is dissolved.

Add salt and mustard and mix well.

Add oil and mix well.

In a nonreactive large mixing bowl, combine vegetables, tossing until well mixed.

Add dressing and toss until well mixed.

Refrigerate at least 1 hour before serving

 

 

Comments: This will keep for at least three weeks tightly covered and refrigerated.
Note: No acknowledgement given at the top because this is radically modified from it's source.  The idea came from the New York Cookbook, but the recipe there has much different proportions of vegetables and the dressing is actually cooked and poured hot over the vegetables.
