Hearty Roast Beef Hash
 

 

¼ cup butter

2 cups diced cooked roast beef

1 large diced peeled potato (about 2 cups)

1 medium onion, diced (about ½ cup)

1 14½-ounce can beef broth

1 teaspoon salt

¼ teaspoon pepper

Melt butter in a skillet.

Add the beef, potatoes, onion, beef broth, salt and pepper.Cover and simmer, stirring occasionally, until potatoes are tender, about 25 minutes,.

Thicken if desired.

Serves 2.

 

Comments: I normally serve on toast.
