MEAT LOAF
| Adapted from: Better Homes and Garden New Cookbook. |
Preheat oven to
350-degrees. Combine eggs and milk; stir in crumbs, onion, parsley, salt, sage, garlic powder, and pepper. Add beef; mix well. Pat into a 5-½ cup oiled ring mold; unmold in a shallow baking pan. Bake in a 350-degree oven for 50 minutes. (Or, pat mixture into an 8x4x2-inch loaf pan; bake for 1 ¼ hours.) Spoon off excess fat. An optional topping can be prepared as follows: Combine ¼ cup catsup, 2 tablespoons brown sugar, and 1 teaspoon dry mustard; spread over meat. Return to oven for 10 minutes. Makes 6 servings. |
Serving Ideas: Transfer meat loaf onto an ovenproof platter. Mound mashed potatoes in the center of the ring of meat loaf and brush with melted butter. Place under broiler for 10 minutes or until potatoes are lightly browned. Garnish with parsley. |
Comments: Don't forget to preheat the oven or to oil the ring mold. I don't care for the optional topping, which the original recipe called for. I have served this to at least 20 people and all have enjoyed it. |
