MOZZARELLA ALLA CAPRESE
 Taken from: 7/25/90 San Diego Tribune

 

1 vine-ripened tomato

4 ounces Buffalo mozzarella

4 basil leaves

Pinch dry oregano

Pinch salt

2 drops virgin olive oil

Slice tomato into 4 slices, arrange on plate, top with 4 slices of mozzarella, dust with dry oregano, sprinkle with salt and garnish with 4 fresh basil leaves.

Offer guests cracked pepper and virgin olive oil when serving.

Recipe can be multiplied to serve additional guests.

Serves 4.
