Spaghetti With Brown Butter Sauce
From The Complete Greek Cookbook by Theresa Karas Yianilos

 

1 pound spaghetti or other macaroni product

1/2 pound butter

1/2 cup grated cheese
      Kefaloteri or
      Parmesan or
      Myzrithra (our favorite)

Preheat oven to 350 degrees

Cook pasta for 10 minutes; drain and rinse under hot running water

Heat butter to a honey brown in a small saucepan. Watch it carefully for these few minutes; it burns quickly and suddenly.

Return pasta to large pot and dribble hot butter over it. Sprinkle with half the cheese and toss gently to mix.

Transfer to a large ovenproof platter; sprinkle with the remaining cheese and bake for 10 minutes. 

Serve hot.

Alternate suggestion: Because we've found it awkward to serve from a single platter, we put the pasta mixture into individual ramekins, sprinkle with cheese, then bake.  Baking time may be shorter this way.
